Overview

The course is suitable for vegetarians but will include vegan dishes. It is also suitable for non-vegetarians who wish to gain knowledge of this style of cooking. The class will cover both savoury and sweet dishes. Each block covers different dishes according to the seasons of the year thus:

  • Block One – Autumn & Seasonal Fare.
  • Block Two – Winter Warmers & Spring Delights.
  • Block Three – Summer Sizzlers & Al Fresco Fancies.

Each session will look at recipes suitable for the seasons stated and would lead naturally to the next season. This would provide a suitable progression to gain more knowledge of vegetarian and vegan foods and dishes.

You will provide ingredients and take the completed or part-completed products away with you. Recipes and shopping lists are provided each week. On the first week of the 10 classes there is an induction session with demonstration, followed by 8 practical classes and the last session is a chance to show off your skills with a dish chosen and created by the students. Full details will be provided on the first evening.

Each week your lecturer will hand out a recipe which will provide your list of ingredients you need to buy for the following week.
