Gary Macleans Top Tips - Pasta


  • 2 eggs 
  • 2 egg yolks 
  • Plain flour
  • Splash of olive oil 
  1. Put the eggs, egg yolks and a splash of olive oil in the food processor and blend until smooth.
  2. Add the flour until the mixture looks coarse (like couscous).
  3. Transfer to a bowl and knead to bring the dough together.
  4. Flatten the dough and put through the pasta machine, put through the widest setting a few times and then feed through a few more times gradually decreasing the settings from the widest down to the narrowest. Lightly dust both sides of the pasta with a little flour if the pasta sticks. When you've got down to the narrowest setting you should have a nice sheet of pasta.
  5. Put the thin sheet of pasta through the cutter setting on the pasta machine and you should have some perfect pasta ready for cooking.
