Overview

This course is suitable for everyone, learning cooking and baking for a gluten free diet. Recipes can be adapted to exclude various allergens. 

You will learn to:-

  • Cook healthy and delicious food that the whole family will enjoy whilst saving money.
  • Use of unfamiliar ingredients and techniques that can easily be created at home.
  • Tips on avoiding cross-contamination in your own home.
Along with cooking gluten free products, you will be given the recipes which again will be adapted for allergen matters.
  • Gluten free Pastry including Short Crust, Choux and Puff Pastry.
  • Gluten Free Sauces and Gravy.
  • Gluten Free Fresh Pasta, Scones, Pizza and Focaccia. 
  • Gluten Free Breaded and Battered Foods.

All dishes can be adapted to suit the vegetarian palate.

This course would also suit professional caterers who would like to offer a range of homemade Gluten Free options to their customers.  In addition, it will assist with allergen information required by EU Food Information for Consumers Regulation 2014.

No minimum entry requirements - this is a fun leisure class for amateur cooks to learn different cookery styles and skills.

What you study

You will study:

  • Gluten free Pastry including Short Crust, Choux and Puff Pastry.
  • Gluten Free Sauces and Gravy.
  • Gluten Free Pizza and Focaccia. 
  • Gluten Free Breaded and Battered Foods.

All of these can be adapted to suit vegetarian and dairy free diets.

Teaching

How the course is taught

  • The first night will be a practical demonstration by the lecturer and recipes will be issued.
  • There will be lecturer led demonstrations every week and also the chance to ask any questions and taste the food.

Additional Information

Materials

All equipment is provided.  You will be required to buy ingredients to bring in with you every week and you'll need containers to take your food home in.

Dress code

  • Appropriate clothing and footwear for the kitchen.
  • Apron to protect your clothing.
  • Tea towel for drying dishes.
