Overview

This course develops your culinary skills focusing on specialist Patisserie subjects to develop your skills to an advanced level.

If you're an existing baker, chef or an advanced home baker looking to learn new techniques and enhance your knowledge to make perfect patisserie's, then this course is for you!

 

What you study

You'll study:

  • Recipes and formulas,
  • The importance of ingredients,
  • The importance of temperature.
  • Producing base dough,
  • Inclusions, filling and toppings,
  • Shaping techniques.
  • Presenting your finished products.

Teaching

How the course is taught

The first night will be a practical demonstration by the lecturer and recipes will be issued.
You'll be required to buy ingredients which you'll bring in with you every week.
There will be lecturer led demonstrations every week and also the chance to ask any questions and taste the food.

Materials

All equipment is provided.

You'll need containers to take your food home in and you'll be required to buy ingredients which you'll bring in with you every week.

Dress code

• Appropriate clothing and footwear for the kitchen
• Apron to protect your clothing.
• Tea towel for drying dishes.
